INGREDIENTS
1) 8 tablespoons wheat flour (Maida)
2) 1.5 tablespoon rice flour
3) 3 tablespoons of yogurt
4) 1 pinch of Yellow food colour
5) 1 pinch of baking soda
6) 2 cups of sugar
7) 1/2 lemon
8) Refined oil
PROCEDURE
1. Take a big mixing bowl, add 8 tablespoons of wheat flour, 1.5 tablespoon of rice flour, 3 tablespoon of curd and a pinch of yellow food colour.
2. Mix them well and add water gradually in small quantity and keep mixing so that it does not form lumps.
3. Add water upto an extent such that it forms a smooth batter of semi thick consistency.
4. Now add a pinch of baking soda and mix it well.
5. Allow the batter to rest for minimum 15-20 minutes.
6. In the meantime, prepare the sugar syrup.
7. Turn on the gas stove and place a pan over it.
8. Add 2 cups of sugar and 1 cup of water (amount of sugar should be twice the amount of water) and boil it constantly in high flame till the sugar melts completely.
9. Now low the flame and allow it to boil for 5-7 minutes.
10. Add few drops of lemon juice and let it boil for 2-3 minutes more.
11. Turn off the gas and keep it aside. Your sugar syrup is ready.
12. Now take a plastic sauce bottle or make a cone with a plastic bag.
13. Fill it with the batter.
14. Take a frying pan and pour refined oil in it.
15. After the oil gets heated, pour the batter into it in the shape of Jalebi.
16. Fry both the sides one by one till it gets a golden brown colour. You will see that your Jalebi is crispy enough.
17. After frying, drench it in the sugar syrup and let it soak for 3-4 minutes.
Your crispy and delicious Jalebi is ready to serve! Enjoy your homemade Jalebi with friends and family.
TIPS
If you do not want to make your Jalebi crispy, lower the amount of rice flour.
You may add the food color in the sugar syrup instead of adding it in the batter.
